4 Refreshing Spring Cocktail Recipes
Wow oh wow did we have fun researching and creating these. The timing couldn’t have been more perfect, it’s currently UK lockdown April 2020, the weather has been 20 degrees and sunny all week and these cocktails were the perfect sunshine in the garden accompaniment. We feel very grateful to be able to put the worries of the current situation aside for a moment and enjoy creating these cocktails for you to try.
These cocktails would make fantastic welcome drinks at a spring wedding, both the colours and the flavours are simply perfect for the season.

Southside Royale
Pomegranate & Grapefruit Fizz
Prosecco Mojito
Pink Senorita
1. Southside Royale
Gin lovers, this first one is for you! I shouldn’t have favourites when it comes to cocktails, they are all wonderful in their own way, but this one is something seriously special! Crisp and fresh, the mint is just incredible.
SOUTHSIDE ROYALE COCKTAIL RECIPE
Serves: 1
INGREDIENTS
7 Mint leaves
50ml Gin
25ml Lemon juice
15ml sugar syrup
Prosecco or champagne (to top up)
INSTRUCTIONS
In a cocktail shaker, lightly crush 6 mint leaves.
Add the gin, lemon juice and sugar syrup to the shaker, fill with ice and shake until the outside feels cold (around 10 seconds).
Strain into a glass (we recommend a coupe).
Top up with fizz of your choice, float the remaining mint leaf on top and serve immediately.
2. Pomegranate & Grapefruit Fizz
A light and refreshing cocktail, this one is a little less heavy on the spirits and so a little lighter to drink, but the grapefruit juice gives it a strong kick!
POMEGRANATE & GRAPEFRUIT FIZZ RECIPE
Serves: 1
INGREDIENTS:
25ml Vodka
50ml pink grapefruit juice
25ml lime juice
25ml sugar syrup
Rose Fizz (prosecco or champagne)
Pomegranate seeds
INSTRUCTIONS:
Add the vodka, grapefruit juice, lime juice, and sugar syrup to a cocktail shaker, fill with ice and shake for 5-10 seconds.
Fill a glass half-way with ice and strain the shaken mix into the glass.
Top up with the pink fizz of your choice and sprinkle with pomegranate seeds. Serve immediately.
3. Prosecco Mojito
On a warm spring day, served on a tray in the garden, this twist on a classic mojito is the ultimate spring refresher and is super quick to make.
PROSECCO MOJITO RECIPE
Serves: 1
INGREDIENTS:
50ml White rum
25ml Lime juice
15ml Sugar syrup
Prosecco (to top up)
6 Mint Leaves (plus an extra sprig to decorate)
INSTRUCTIONS:
In a highball glass add the rum, lime juice, mint leaves and sugar syrup.
Add a handful of crushed ice to the glass and muddle.
Add another handful of crushed ice, then top with prosecco.
Garnish with mint and serve immediately.
4. Pink Senorita
Maracas at the ready, this powder pink tequila cocktail is the perfect spring party starter.
PINK SENORITA RECIPE
Serves: 1
INGREDIENTS
50ml Tequila
25ml Sugar Syrup
100ml Grapefruit Juice
Cranberry Juice (to top up)
Fresh Mint
INSTRUCTIONS
Add the tequila, simple syrup, and grapefruit juice to a cocktail shaker and fill with ice, then shake for 10 seconds.
Fill a glass with ice and then strain the mix into the glass.
Top with a tiny splash of cranberry and a sprig of mint.
Serve immediately.
