Cocktail Recipe: Lavender Grapefruit Mimosa
The Lavender & Grapefruit Mimosa
INGREDIENTS
25ml Lavender syrup
25ml Pink grapefruit juice
Prosecco 75-100ml
Lavender Syrup Ingredients: Sugar, Water, Handful of Lavender
Lavender Sprigs (to garnish)
RECIPE
First make the syrup, by combining 1 cup sugar and 1 cup water in a pan with a handful of fresh (and washed) lavender. Allow the mixture to come to a boil, stirring regularly, and then reduce to a simmer and leave for around 15 minutes, stirring regularly, until the mixture reduces slightly. allow to cool, then strain, ready for use.
Put a handful of ice, 25ml lavender syrup and 25ml of grapefruit juice into a cocktail shaker and shake for 10-15 seconds to combine.
Strain the mix into a coupe glass.
Top with prosecco and gently stir together.
Garnish with sprigs of lavender and serve.
