5 Sensational Summer Mocktail Recipes
You may have noticed that we love a good cocktail, but there are times when, for a variety of reasons, you need a great mocktail instead.
It could be that you are the designated driver, or maybe you over-indulged slightly the night before, or perhaps you just don’t drink. Whatever the reason, that doesn’t mean you want to miss out on the fun drinks, and with that in mind, we’ve got these 5 easy and delicious summer mocktail recipes for you to try.
These are perfect if you’re planning a party or celebration of some sort, even a wedding, these make great welcome drink alternatives.

1. Mocktail Mule
This twist on the classic Moscow mule is absolutely delicious! Plus, you don’t feel like you’re missing out on the alcohol as it has a nice kick from the ginger ale.
MOCKTAIL MULE RECIPE
Serves: 1
INGREDIENTS
25ml Lime juice (ideally from a fresh lime)
1tbs Sugar syrup
50ml Soda water
150ml Ginger ale
6-8 Mint leaves (for the drink and to garnish)
Lime slice
Ice
INSTRUCTIONS
In the bottom of your glass, add the lime juice, 4 torn mint leaves, sugar syrup and soda water and stir very lightly.
Fill the cup to halfway with ice and then pour the ginger ale over the ice until full.
Garnish with mint leaves and a slice of lime and serve.
2. Blueberry Rosemary Crush
We’ve had a lot of fun playing with this recipe. The flavour of the rosemary is just delicious. The day we took the photos the blueberries turned the drink super pink, but on other days it was more of a softer colour, so don’t think you’ve done anything wrong if yours is paler in than the photo.
BLUEBERRY CRUSH MOCKTAIL RECIPE
Serves: 1
INGREDIENTS:
10 blueberries (plus more to garnish)
25ml Rosemary syrup (see below)
25ml Lemon juice
1tbs Honey
Sparkling water (top-up)
1 sprig Rosemary
FOR THE ROSEMARY SYRUP:
3-4tbs Sugar
3-4tbs Water
1 sprig Rosemary
INSTRUCTIONS:
To make the Rosemary syrup, add all of the syrup ingredients to a small pan and simmer on medium heat for 10 minutes. Stir regularly, especially whilst bubbling, don’t let it burn (we had our hob on level 3/4). Remove from the heat and allow it to cool completely. Strain before using.
Add the blueberries to a cocktail shaker and muddle thoroughly. Now add the Rosemary syrup, honey and the lemon juice, along with a handful of ice.
Shake well, for around 10 seconds, until the outside of the shaker feels cold.
Add fresh ice cubes to a glass, strain over the mix from the shaker.
Top up with sparkling water and decorate with blueberries on a cocktail stick and a sprig of rosemary.
3. Homemade Limonada
This recipe could not be simpler. No-fuss or hassle, just chuck it in the blender and blitz. You may want to add more sugar to taste, or perhaps swap the sugar for honey or another natural sweetener.
HOMEMADE LIMONADA RECIPE
Serves: 4
INGREDIENTS:
2 Lemons or Limes (+ 1 extra to decorate)
120g Sugar
Large bottle Sparkling water, soda or just still water
INSTRUCTIONS:
Without peeling, chop your lemons and/or limes into quarters and remove any seeds.
Place the quartered chunks into a food processor, along with the sugar and 750ml of tap water.
Blitz until thoroughly blended, the mixture should have a bit of white foam.
Strain/sieve the mixture into a jug.
¾ Fill four tall glasses with ice, pour over the blended mixture to halfway full.
Top up your glasses with either soda, sparkling, or still water. We love it best with sparkling water.
Decorate your glass with a slice of lemon or lime and serve.
4. Pineapple Mojito Mocktail
A fun mocktail that packs a delicious pineapple punch and looks impressive too!
PINEAPPLE MOJITO MOCKTAIL RECIPE
Serves: 1
INGREDIENTS
100ml Pineapple juice
30ml Lime juice
100ml Sparkling lime flavour water
6 finely chopped mint leaves (plus more to garnish)
Pineapple
Crushed Ice
INSTRUCTIONS
Shake the pineapple juice, lime juice and finely chopped mint leaves in a cocktail shaker with a handful of ice.
Fill a glass halfway with crushed ice and strain over the shaken mixture.
Top up with Lime Sparkling water and garnish with mint leaves and pineapple.
Insert a straw and serve immediately.
5. Rosemary & Grapefruit Spritz
You may have noticed that we love a bit of rosemary in a mocktail, hence two rosemary recipes. The sugar syrup recipe is exactly the same and makes a HUGE difference to the flavour, so is certainly worth doing. This one has such great flavour you (almost) don’t miss the alcohol at all!
ROSEMARY & GRAPEFRUIT SPRITZ MOCKTAIL RECIPE
Serves: 1
INGREDIENTS:
35ml Rosemary syrup
75ml Grapefruit juice
Soda (to top up)
Crushed Ice
1 sprig Rosemary
FOR THE ROSEMARY SYRUP:
3-4tbs Sugar
3-4tbs Water
1 sprig Rosemary
INSTRUCTIONS
