Delicious, Boozy, Indulgent Iced Coffee Recipe

Let’s face it, we’re in the UK, and so despite all of our combined wishing, hoping and praying, many of our ‘summer’ days happen to be rainy. Despite this, in between the rain showers we do also get to enjoy some sunny, and actually rather hot, days.

On these days of glorious sunshine, it is our mission and duty to soak up every single second and relish them as wholly as possible, and what better way to add to the joy of a sunny summer’s day than with a delicious, and slightly indulgent, boozy iced coffee?

Our recipe does include a little tipple, but you can leave it out and have a delicious drink that still feels like a real treat.

This recipe serves one, so simply multiply it by the number of people you’re serving and you’ve got a drink for all to enjoy.

Boozy Iced Coffee Recipe

Serves: 1

INGREDIENTS

150ml strong black coffee

50ml milk

Sugar syrup/sweetener of choice

A handful of ice (plus extra for glass)

Liqueur of choice (if using)

Coffee cream topping ingredients

50ml double cream

1-2 tsp of strong black coffee

1 tsp of icing sugar.

INSTRUCTIONS

  1. Make up the 150ml of strong black coffee, allow to go cold.

  2. Now, make the coffee cream topping. Place all the coffee cream ingredients into a bowl and whisk with an electric whisk until thick. Set aside.

  3. Now, put the 150ml of cooled coffee, 50ml of milk, handful of ice and sweetener of choice into a blender and blend until smooth and foamy.

  4. Put a few cubes of ice into a glass and pour over 25ml of your liqueur of choice (Kahlua or Bailey’s are always a winner), then pour in your coffee mix from the blender.

  5. Finally, gently spoon on your coffee cream topping.

  6. Enjoy!


Notes

  • We used 2tsp of coffee for the topping, but we say 1-2 so that you can adjust to your taste preference.

  • We used one tbsp of sugar syrup to sweeten ours, but you can adjust the quantity and also the sweetener to your preference. Maple syrup works well, or you could use a sugar-free sweetener if you’re watching the cals!

Well there you have it! This little number will certainly be coming out a few more times this year for us before we give in to the inevitable change of season and slip, quite willingly, into the season of boozy hot chocolates and mulled drinks galore, instead!
